Comme promis, voici la recette du red pepper jelly. C'est le temps parfait en cette saison d'automne, d'acheter vos poivrons rouges frais au marché le plus près de chez vous et de cuisiner cette délicieuse confiture aux poivrons rouges.
It's the perfect time to get your hands on some delicious Red Pepper Jelly, or better yet, make it yourself . Here's the recipe:
Ingredients
2 cups pureed sweet red peppers ( about 3 to 4 large )
5½ cups sugar
1 cup distilled vinegar
1-3 cup lemon juice
1 bottle liquid pectin
Place red peppers, sugar and vinegar in pot. Heat rapidly to boiling, stirring continuously. Remove from heat and let stand 15 minutes. Reheat, add lemon juice. Let it come to a boil, then add pectin. Boil for 5 minutes, stirring constantly. Pour hot jelly into hot sterilized jars and seal. Process in hot water canner for 5 minutes.

P.S. my mother adds to this recipe the zest of an orange .
